Three Spirits Chicón means Spirit in Mayan.

The spirits of water, fire, and agave are involved in the creation of mezcal.

These three elements have been used by shamans since ancient times during their ceremonies.

In ancient times, mezcal masters would turn to shamans to remove bad energy from the agave fields and, at the same time, bring good luck to the new harvests.

FROM HARVEST TO SPIRIT

The Process

The agaves, cultivated for up to 22 years, are harvested, smoked underground, ground in a tahona, fermented in wooden vats, and double-distilled with pure spring water, honoring a centuries-old tradition.
